Can a potato really change your life? Yes.
I should probably say a potato and a bit of knowledge can change your life. Or at the very least, it'll make you think about potatoes in a whole new way.
One small change in when and how you prepare potatoes, pasta, rice, etc., can take them from a "bad" starch to a much healthier alternative.
It's called Resistant Starch, the molecular change that occurs after cooking and cooling. Let me explain:
- Starches are typically digested very quickly, raising blood sugar
- Unlike typical starches, resistant starches are broken down the way fiber is, leading to lower blood sugar spikes
- Like fiber, resistant starches act as a prebiotic in our systems encouraging good gut bacteria

So how do you turn a potato (or pasta or rice) into a resistant starch?
It's simple. Once you've cooked your potatoes, rice or pasta, simply cool, then refrigerate. The starch will need a few hours in the refrigerator to fully cool, so plan ahead.
The best way to think of this is:
- When you make brown rice, make double and refrigerate the extra
- Same with pasta. Simply reheat the next day
- Same with potatoes
This is one way to feel a little bit better about that 4th of July potato salad we all love. It's chilled by design, so no extra planning needed.
